I buy a large piece of boneless prime ribeye roast, and ask the butcher to trim the outer fat and shave the meat as thinly as possible.  I find this to be the best way to get the most fresh and tender pieces of meat.   Usually, it is more than what i need, so I divide them into 1 pound portions and freeze for a later use.
